Chef Chris Fissel has an extensive culinary career in San Francisco beginning in the kitchens of James Beard award-winning Boulevard to the famous Chez Spencer. Now at Dirty Water, Fissel has created a wild game-focused menu of the freshest exotic meats, all cooked over a wood-fired, open-flame oven and served in large, shareable portions. His world class "American Primal" cuisine is billed as paleo-friendly, and ranges from seared duck hearts, axis deer tartare, crispy pig ear, bone broth stew, whole roasted squab, grilled quail, and guinea hen.
